Our Culotte cuts are a specialty order.  We will process this cut on our next harvest (we harvest once every 4 weeks).  We will communicate with you regarding availability of your order.


If rib-eye is the king of meats, then the coulotte cut is queen.  Very popular in Brazil, picanha (pronounced “pee-kahn-yah”) is one of the most flavourful cuts you will find.


Picanha is a cut taken from the top of the rump. You might also know it as a rump cover, rump cap, sirloin cap or even culotte steak.


It is triangular in shape and surrounded by a layer of fat called a fat cap - our bison are very lean so the fat cap will be less thick than that of beef or even grain finished bison. Because it is not an overused muscle, this cut remains beautifully tender and juicy, producing an amazing flavor when cooked.


Each package contains one roast a little over 1 lb.
