Skirt steak is long, flat, and prized for its flavor rather than tenderness.  It is the cut of choice for making fajitas, arrachera, Chinese stir-fry, churrasco, and Cornish pasties. To minimize toughness and add flavor, marinate before grilling, pan-sear very quickly or cook (braise) very slowly.  Slice against the grain before serving to maximize tenderness.


Package contains about 14 oz of skirt steak.
