Bison Veggie Bowl

Ingredients:

For the Veggie Bowl:

  • 2 cups cooked quinoa or brown rice

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1 red bell pepper, diced

  • 1 avocado, sliced

  • 1 cup shredded carrots

  • 1/4 cup chopped fresh cilantro

For the Dressing:

  • 3 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon Dijon mustard

  • 1 clove garlic, minced

  • Salt and pepper to taste


Instructions:


  1. Cook Bison:

    • In a large skillet, heat 1 tablespoon of olive oil over medium heat.

    • Add minced garlic and sauté until fragrant.

    • Add ground bison, cumin, smoked paprika, salt, and pepper. Cook until the bison is browned and cooked through. Set aside.


2. Prepare Dressing:

  • In serving bowls, layer cooked quinoa or brown rice.
