  • 6-8 cloves of garlic, minced

  • Salt and pepper to taste

  • Cooking oil

Instructions:

1. Marinate the Bison Ribs:

  • Place the bison short ribs in a bowl and season with salt and pepper.

  • In a separate bowl, mix the pineapple juice, ketchup, brown sugar, apple cider vinegar, and soy sauce to create the sweet and sour sauce.

  • Add the minced garlic to the sauce, reserving a portion for later.

  • Pour the sauce over the bison short ribs, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.

2. Preheat and Sear:

  • Preheat your oven to 325°F (163°C).

  • In a large oven-safe skillet or Dutch oven, heat some cooking oil over medium-high heat.

  • Remove the bison short ribs from the marinade, reserving the marinade for later.

  • Sear the ribs on all sides until they are browned. This should take about 3-4 minutes per side.

3. Saute the Aromatics:

  • In the same skillet, sauté the diced onion and the reserved minced garlic until they become fragrant.

4. Combine and Bake:

  • Return the seared bison short ribs to the skillet with the sautéed aromatics.

  • Pour the reserved marinade over the ribs.

  • Cover the skillet or Dutch oven and transfer it to the preheated oven.

  • Bake for approximately 2.5 to 3 hours or until the bison short ribs are tender and falling off the bone.

5. Thicken the Sauce:

  • About 15 minutes before serving, remove the skillet from the oven and place it back on the stovetop over low heat.

  • In a small bowl, mix the cornstarch with a little water to create a slurry. Gradually add this slurry to the sauce in the skillet, stirring constantly until the sauce thickens to your desired consistency.

6. Serve and Enjoy:
